ROUTINE INSPECTION
Notes: - Facility provided proof of payment for permit fees. Receipt had a transaction date for 06/11/2026 at 1:39 pm. - Complaint investigation conducted in conjunction with this routine inspection. - PIC proposed installing a ventless type I hood system to allow for cooking. PIC mentioned they also submitted to plan check for single piece of equipment at their sister facility next door to install a ventless fryer.

- K07: Proper hot and cold holding temperatures
Raw chicken was found stored on the drainboard of the prep sink and measured at 56F. Per pic, it was washed about 15 minutes ago. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Chicken was moved to a cooler to cool down.
- K35: Equipment, utensils: Approved, in good repair, adequate capacity
Facility is using cardboard to line shelves. [CA] Discontinue the use of cardboard boxes to line shelves/flooring, use approved equipment made of materials that is easily cleanable, durable, smooth, and nonabsorbent. Discussed with PIC ability to line shelves with FRP.

Facility was found cooking beef broth on an induction burner outside of the type II hood. [CA] Provide approved exhaust hood ventilation over all cooking equipment as required to effectively remove cooking odors, smoke, steam, grease, heat, and vapors.
