    Raw chicken was found stored on the drainboard of the prep sink and measured at 56F. Per pic, it was washed about 15 minutes ago. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Chicken was moved to a cooler to cool down.

  • K35: Equipment, utensils: Approved, in good repair, adequate capacity

    Facility is using cardboard to line shelves. [CA] Discontinue the use of cardboard boxes to line shelves/flooring, use approved equipment made of materials that is easily cleanable, durable, smooth, and nonabsorbent. Discussed with PIC ability to line shelves with FRP.

    Facility was found cooking beef broth on an induction burner outside of the type II hood. [CA] Provide approved exhaust hood ventilation over all cooking equipment as required to effectively remove cooking odors, smoke, steam, grease, heat, and vapors.

Notes: - This is the first routine inspection after plan check final. - Per PIC, staff started working about 3 weeks ago and have been instructed to obtain food handler cards within 30 days of hire. - Ensure to provide a dedicated thermometer and sanitizer testing materials for each facility (MeiMei Dumpling and SumiSushi) - Provided cold holding, hot holding, reheating, proper refrigeration storage, handwash reminder, and ware wash procedure stickers.
