ROUTINE INSPECTION

PIC states that they have been open for less than one month. Facility shall obtain a Food Safety Certificate (FSC) within 30 days. All employees shall have a Food Handler card and cards shall be available for review at all times. Educated employees on how to properly wash, rinse, and sanitize. Set up the three compartment sink, with sanitizer, in facility.

    Employee washed a knife and cutting board with soap and water and placed equipment back into storage. Employee skipped sanitizing step. [CA] Manual warewashing shall be accomplished by using a three-compartment sink where the utensils are first precleaned, washed with hot soapy water, rinsed with hot water, sanitized with an approved method, and air dried. Use 1 TBS of bleach (5.25%) per 1 gal. of water for chlorine solution (100 PPM). Use 1 tbs of quaternary ammonium (10%) per 2 gal. of water for quaternary ammonium (200 PPM). [COS] Three compartment sink was set up, including sanitizer, employees were directed to wash, rinse, and sanitize equipment.
