  • K41: Plumbing approved, installed, in good repair; proper backflow devices

    Observed drainpipe from the ice machine extends directly into the floor sink. [CA] Provide air gap between the drain pipes and floor sink that is at least twice the diameter of the inlet and no less than 1 inch.

  • K35: Equipment, utensils: Approved, in good repair, adequate capacity

    1) Observed the active use of TurboChef oven without a ventilation hood or prior approval from this Department. [CA] Discontinue the use of unapproved equipment. Provide approved exhausted hood ventilation over all cooking equipment as required to effectively remove cooking odors, smoke, steam, grease, heat, and vapors. Facility to submit plans or apply for hood exemption to Plan Check Department. 2) Observed the active use of countertop, domestic freezer. [CA] Discontinue the use of unapproved equipment. All utensils and equipment shall be certified or classified for sanitation by an American National Standards Institute (ANSI) accredited certification program (e.g. NSF, UL EPH, UL Sanitation, CSA Sanitation, or ETL Sanitation).

    Observed wiping cloths are stored in sanitizer concentration measuring at 0 ppm. [CA] Wiping cloths shall be stored in an approved sanitizing concentration when not in active use.

    Observed bulk coffee bags are stored while open and uncovered. [CA] After opening, bulk ingredients shall be transferred to approved, food grade containers with tight fitting lids.

    At the automatic handwash sink in the employee restroom, measured the maximum water temperature at 73F. [CA] Water shall be supplied from 100-108F measured from the faucet at handwash stations.
