Facility lacks testing materials for sanitizer of choice (chlorine). [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.
- K35: Equipment, utensils: Approved, in good repair, adequate capacity
Observed the use of an unapproved, domestic chest freezer in the back area. [CA] All food equipment shall be certified or classified for sanitation by an American National Standards Institute (ANSI) accredited certification program (e.g. NSF, UL EPH, UL Sanitation, CSA Sanitation, or ETL Sanitation).

At the handwash station in the front cook line, observed the soap dispenser is partially blocked by the countertop warmer. [CA] Handwash station shall be fully stocked and accessible at all times. Nearby handwash station is available for use in the back kitchen area.
- K26: Approved thawing methods used; frozen food
Observed frozen beef thawing at ambient temperature on the preparation counter. [CA] Frozen potentially hazardous food shall only be thawed in one of the following ways: 1) under refrigeration that maintains the food temperature at 41°F or below, 2) completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70°F or below, and with sufficient water velocity to agitate and flush off loose particles into the sink drain, 3) in a microwave oven if immediately followed by immediate preparation, 4) as part of a cooking process.

Measured ranch dressing on the preparation counter at 68F. Per PIC, ranch dressing was taken out of the upright cooler less than 1 hour ago. PIC stated that ranch dressing is routinely changed out. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [SA] Ranch dressing was relocated back into the upright refrigeration unit for rapid cooling. Recommend to keep ranch dressing in the cooler or in an ice bath.
