    Observed clean, wet dishes are stacked on top of each other without being properly air dried. [CA] Equipment and utensils must be air dried or properly stored to facilitate drying after sanitizing.

  • K40: Wiping cloths: properly used, stored

    Observed soiled wiping cloths stored directly on preparation counters. [CA] Wiping cloths shall be stored in an approved sanitizing concentration when not in use.

  • K36: Equipment, utensils, linens: Proper storage and use

    1) Observed working knives stored in between preparation units. [CA] Equipment and utensils shall be securely stored in a clean and sanitary condition. 2) Observed multiple bowls without handles or scoop handles stored in direct contact with bulk ingredients. [CA] Provide scoops with handles to prevent direct hand contact with food. Store handles in such a way to prevent contamination.

    Observed hole in the wall in the piping nearby the 3-compartment sink. Per PIC, facility is in the process of repairing the wall. [CA] Seal all gaps in the facility. The facility shall be fully enclosed to prevent pest entrance and harborage.
