    Observed employee hair tied in a pony tail. [Corrective Action] Ensure hair net is worn for employees with long hair or tie hair into a bun.

  • K21: Hot and cold water available

    Hot water at the 3 compartment sink was measured at 107 degrees Fahrenheit. [Corrective Action] Provide hot water at a minimum temperature of 120 degrees Fahrenheit.

  • K07: Proper hot and cold holding temperatures

    Raw shell eggs and hot dogs observed left out on the work table and were measured at 49 degrees Fahrenheit. [Corrective Action] Maintain Potentially Hazardous Foods at or below 41 degrees Fahrenheit.

    1. Observed open pastries display in public without a sneeze guard. Per PIC, it is cooling at the display area then will be bagged. [Corrective Action] Discontinue cooling foods in the public area. Cool the foods in the speed rack. 2. An open bag of sugar was observed stored directly on the floor in front of the handwash sink. [Corrective Action] Do not store any foods near the handwash sink. Store foods 6 inches above the floor on approved shelving.

    Waste water drains very slowly at the floor sink under the 3 compartment sink. [Corrective Action] Ensure waste water drains properly.

  • K45: Floor, walls, ceilings: built,maintained, clean

    Broken flooring observed by the proofer and the ice machine. [Corrective Action] Maintain floors in good condition.
