    Measured the hot water temperature at a maximum of 62 F from the 3 compartment sink. The hand washing sink hot water supply measured at a minimum of 100 F. PIC stated that the hot water heater for the three compartment sink is non-functional. The hand wash sink hot water is supplied from an alternative, functional water heater. [CA] Ensure hot water heater is operable and maintained in good repair at all times. Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks. [SA] Cease all ware washing onsite. All wares shall be returned to the central kitchen for warewashing until hot water supply has been restored to the 3 compartment sink. Met with plumbers onsite, whom started repairs. Contact inspector for a follow-up inspection when hot water has been stored to the three compartment sink.

    Measured the hot water temperature at a maximum of 71 F from all sinks within the facility. PIC stated that boiler is currently not functioning. [CA] Facilities that prepare open foods shall not be in operation without a hot water supply. An approved, adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks. Handwashing facilities shall be equipped to provide minimum 100°F water under pressure for a minimum of 15 seconds. [SA] Facility stopped all open food preparation. Prepackaged cold PHF's and pizza delivery served to students. A temporary hot water dispenser was set up at the hand washing sink with 105 F water to properly wash hands with warm water. All warewashing on site was ceased. If future food services occur prior to hot water being restored, all foods shall be prepackaged prior to delivery at the school site. Manager stated that the boiler is planned to be running by tonight. Prior to resuming open food preparation, contact inspector for a follow-up inspection when the hot water supply has been restored. Failure to comply may result in enforcement action.
