    Observed soiled wiping towel on work surface at front service area. Towel was used to wipe work surface and espresso machine steam wand. [corrective action] Store towel in a bucket/container with sanitizing solution in between uses.

    Observed employee wash equipment at the 3-compartment sink without sanitizing. [corrective action] Ensure all food contact surfaces are washed, rinsed, and then sanitized. [correction] Reviewed proper ware washing procedure with both employees. Chlorine sanitizer at concentration of 100 PPM was set up in the 3-compartment sink. Equipment was sanitized after washing and rinsing.

Discussed and reviewed warewashing steps with employee. Manual warewashing shall be accomplished by using a three- compartment sink where the utensils are first precleaned, then washed, rinsed, sanitized, and air dried. All food contact surfaces of utensils and equipment shall be sanitized as required. Manual sanitization shall be accomplished by one of the following: • Contact with 100 ppm chlorine solution for 30 seconds • Contact with 200 ppm quaternary ammonia solution
