    1. There is a grease accumulation on the ceiling tiles and walls near the exhaust hood. [CA] Ensure to have the exhaust hood on at all times when equipment is in use. Ensure the hood is functioning properly. 2. The light bulbs under the exhaust hood are all out of order. [CA] In every room and area in which any food is prepared, manufactured, processed or prepackaged or in which equipment or utensils are cleaned, sufficient natural or artificial lighting shall be provided. Replace the bulbs.

Salad bar is open from 11 am to 2 pm. Notes: Measured the ambient of the area where the inserts go into to be 47°F. Digital readout of the internal thermometer displayed 40°F.

Recommend using deeper inserts made of metal that were being used for non-PHFs (broccoli, carrots, etc) so PHFs are kept cold. Measured the ambient of the area where the inserts go into to be 41°F. Digital readout read at 40.3°F.
