- K27: Food separated and protected
Observed foods at the self-service bar are not adequately covered by the sneeze guard. The sneeze guard is turned away from the consumer line. [CA] Food on display shall be protected from cross-contamination, by the use of an approved sneeze guard that intercept a direct line between the consumer's mouth and the food being displayed.
- K08: Time as a public health control; procedures & recordsCritical
Per PIC, foods at the self-service bar are kept on time as a public health control (TPHC). Observed time logs for foods on the service line is not completed at the time of inspection. PIC stated that foods were placed out at 2:00 PM (less than 30 minutes prior to temperature measurement). [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Employees filled out the time log for all items during inspection.
- K21: Hot and cold water available
In the restroom, measured the maximum water temperature at the handwashing sink at 72F. [CA] Water shall be supplied from 100-108F as measured from the faucet at handwash stations.
- K41: Plumbing approved, installed, in good repair; proper backflow devices
In the men's restroom, observed the urinal is non-functional and leaking. Observed a pool of standing water underneath. Other functional toilets are available within the restroom. [CA] Plumbing fixtures shall be maintained in good repair.
