    Observed soiled rags on food prep surfaces. [CA] Store wiping rags in sanitizer bucket with proper sanitizer concentration (100ppm chlorine or 200ppm quat).

PIC stated the boba was put in the warmer around 1pm. [CA] Ensure PHFs that are subject to time control are time marked for 4 hours and discarded at the end of the 4 hour mark. [COS] PIC will discard boba within 4 hours.
