    The two door undercounter cooler was measuring at an ambient temperature of 52F. Unit was holding sealed nondairy milk and one in use gallon of milk. [CA] Refrigeration must be capable of maintaining PHFs at 41°F or below. [SA] PIC instructed staff to use the adjacent cooler.

    Half and half and cream observed in carafes at room temperature. Cream measured to be 47F and half and half observed to be empty. Per operator dairy carafes are changed every 1 hour to new carafes from cooler. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Carafes were replaced with freshed and filled carafes. Logs were made and filled to track time on carafes.
