Facility is closed due to the following major violation: Inadequate warewashing facilities (held in common warewashing area has been closed due to vermin) Prior to reopening, these violations must be corrected and written approval must be received from this department. To request a follow-up inspection to verify correction, call Travis Ketchu at (408) 918-3469, Monday-Thursday 7:30 AM-5:00 PM, call (408) 918-3400 on Fridays (office is closed on County holidays). The first follow-up inspection is free of charge. Subsequent follow up inspections after first follow up shall be billed $298/hr during business hours and $645/ hr during non business hours upon availability. Failure to comply may result in enforcement action.

The held in common area is closed due to cockroach activity (PR0441426). [CA] Facility shall not operate without adequate warewashing facilities. Manual warewashing shall be accomplished by using a three-compartment sink where the utensils are first precleaned, washed with hot soapy water, rinsed with hot water, sanitized with an approved method, and air dried. Use 1 TBS of bleach (5.25%) per 1 gal. of water for chlorine solution (100 PPM). Use 1 tbs of quaternary ammonium (10%) per 2 gal. of water for quaternary ammonium (200 PPM). Contact this department for a follow-up inspection once the held in common area has been reopened.
