- K35: Equipment, utensils: Approved, in good repair, adequate capacity
Observed vacuum sealing equipment on site. It does not appear to be used. [CA] Remove equipment from facility or submit standard operating procedures or a HAACP plan to DEH for approval. Observed cardboard lining shelves in preparation area and towels lining shelves in walk in fridge. [CA] Discontinue use of cardboard and towels to line shelves. Use approved equipment made of materials that is easily cleanable, durable, smooth, and nonabsorbent.

Food safety certification was not available at time of inspection. [CA] Food facilities that prepare, handle, or serve non-prepackaged potentially hazard foods shall have a valid Food Safety Certificate available for review at all times. Food handler cards were not available at time of inspection. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.

Observed what appeared to be mold like substance on the wall under the ice bin in the preparation area. [CA] Clean and sanitize walls and maintain in good condition.

Soap dispenser was provided at front handwash sink however, it was empty at the time of inspection. [CA] Provide handwashing cleanser in dispenser at handwash stations at all times during operation. [COS] PIC refilled the soap dispenser. MINOR - Paper napkins are provided at front handwash sink and not in a dispenser. Paper towels provided in restroom are not in a dispenser, they are provided on top of the dispenser. [CA] Single-use sanitary towels shall be provided in dispensers.

Quaternary ammonia test strips were not available at time of inspection. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.
