ROUTINE INSPECTION
All foods are prepackaged and delivered by Choicelunch. TPHC time-marking was available. A follow-up inspection will be conducted to assess compliance for hot water at the kitchen sinks. The first follow-up is free of charge. Any additional follow-up inspection(s) shall each be billed $282/hr during business hours. Failure to comply may result in enforcement action. Measured hot/warm water at all sinks (handsink, prep sink, 3-compartment sink) in kitchen to be 77F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks. Handwash sinks must supply 100F warm water. [SA] School only serves prepackaged food from Choicelunch; no open foods or food prep occurs at the facility. A follow-up inspection will be conducted to assess compliance. See notes below.
ROUTINE INSPECTION
Prepackaged foods delivered from Choice Lunch. Observed foods were time-marked with start time at 10:22am; operator stated Choice Lunch comes to pick up food within 4 hours. Latest lunch is typically served at 12:01pm. Per operator, no food prep is conducted. Observed high-temperature dishwasher in kitchen. Operator stated they do not use it. If there are no plans to use the dishwasher, remove it from the facility to prevent clutter and potential vermin harborage.
Time as a Public Health Control (TPHC) was observed to be utilized for the prepackaged foods, but no TPHC written procedures were available. [CA] When using TPHC, written procedures must be available for review upon request. [COS] Operator filled out and signed TPHC written procedures form provided by specialist.
Measured hot water at the 3-compartment sink to be 115F. [CA] Provide hot water (120F) at the 3-compartment sink.
Observed the kitchen handsink's wall-mounted paper towel dispenser was empty. Note: the nearby prep sink (set up as handsink) had stacks of napkins stored with utensils/condiments nearby. [CA] Ensure the handsink is stocked with soap and paper towels at all times. [SA] A stack of napkins was placed right next to the prep sink. Facility does not prep any food; the prep sink may be used as a handsink until the handsink is stocked.
